We seem to eat tacos a lot. They’re so easy, everyone likes them and there are hundreds of variations so they are never boring. Plus, they pair VERY nicely with a beer or a margarita. This time we tried mixing citrus and spicy flavors in with the meat as it cooked. When we started cooking it, we weren’t quite sure how it was going to turn out because we’ve never tried this way before. Spoiler alert: it turned out delicious. We used our new Traeger Ironwood and everytime we use it we’re more and more impressed. The temperature control is undeniably awesome! This is our most recent taco concoction. Shredded Beef Tacos

Ingredients
  

  • 1 Orange
  • 1 Lemon
  • 1 Lime
  • 1 Onion
  • 2 Jalapeños
  • 5 cloves Garlic
  • 1 stick Butter
  • 2 lbs Beef chuck roast

Instructions
 

  • Season roast with taco seasoning and smoke for two hours at 300 degrees.
  • Cut up and wrap all other ingredients with meat in foil.
  • Cook for another two hours or until roast internal temperature is 205 degrees. Shred beef and serve in corn tortillas.
