Smoked Pot Roast

A delisious take on the classic pot roast - complete with BBQ rubs and beer!

Ingredients
  

  • 3 lb tip round roast (or roast of your choice)
  • Montana Outlaw BBQ Beef Rub
  • Kosmos Q SPG
  • 5 carrots
  • 5 celery stalks
  • 2 lbs yellow potatoes
  • 1 yellow onion
  • 1/2 bunch parsley
  • 2 sprigs thyme
  • 3 cloves garlic
  • 1 small container mushrooms
  • 1 dark beer
  • 2 cups beef broth
  • 3 tbsp olive oil

Instructions
 

  • Season roast with Montana Outlaw BBQ Beef Rub and Kosmos Q SPG, set aside to rest at least 2 hours or up to 8
  • Chop all vegetables and set aside
  • In a oven-proof pot, heat olive oil over medium high heat and brown all sides of roast
  • Remove from heat. Light your smoker and warm to 250°
  • Deglaze the pan with the beef broth and add beer and vegetables
  • Place in smoker without lid for 1 hour
  • Cover and cook for 5 hours or until tender
